The principle behind VoIP is simple. Calls are placed over the Internet instead of using dedicated voice lines to do the job. This is easy to understand once we realized that all information can be digitized and sent as a signal over a wire. In fact, this also happens with regular voice - your sound signals are encoded and sent over a wire. With the Internet, such things become easy and voice communication can happen in real time just as with a normal phone.
** Crown Equity Holdings Inc. (CRWE) reported that it has entered into a 50/50 joint venture agreement to deploy VoIP (Voice over Internet Protocol) technology delivering voice, video and data services to residential and commercial customers.
The joint venture company is Crown Tele Services Incorporated, which looks forward to building an outstanding team to develop and deliver voice and video over IP services globally.
According to IBISWorld Industry Reports, Digital voice will be the fastest growing U.S. industry in the next five years. Voice over Internet Protocol leads the list of the ten most dynamic industries with revenue in 2010 of nearly $12.5 billion dollars, growth 2000 - 2010 of 194% and forecast growth 2010 - 2016 of 17.6%
VoIP industry is fast augmenting and hence it may assure a definite hike in the revenue generation to any organization that steps into this field.

Asda launches mobile grocery site for smartphones

Posted about 23 hours ago by kimtopps to kimtopps's posterous

Asda has launched a mobile optimised transactional grocery site, allowing customers to buy Asda groceries online using a smartphone.

Responding to this trend, Asda's new mobile-optimised site offers all of the features on the main Asda.com grocery website, allowing customers to register, shop and amend an existing order or delivery slot up until 10pm the day before their delivery is due.
Asda's grocery home shopping service has been in operation since 2001 and covers 97% of UK postcodes with deliveries.
The new mobile optimised site also includes a mobile store locator, offering maps and directions so customers can find their nearest Asda when they're out.
Kate Cuthbertson, Asda's head of mobile strategy, said: "The mobile site was an international collaboration between Asda and the Walmart mobile team based in the US. We'll be constantly updating and improving the site over the next few months, with lots more interesting mobile developments to follow soon."
The move follows the launch of the Asda Price Guarantee iPhone App which has been downloaded by more than 250,000 customers since October 2010.

A Summer Lunch For Two

Posted about 21 hours ago by kimtopps to kimtopps's posterous

When I was a little girl, I loved day trips. Sometimes it was the beach, other times the countryside. I loved packing lunches and even then, I expected to have multiple courses and snacks to munch on throughout the day. In retrospect, I think food was actually the thing I looked forward to the most, more so than the destination itself.

A few days ago, as I was completely submerged in writing, I looked up at my computer screen. "It is 4 o'clock and I have not left the house all day!" I thought. Seems to happen often these days.
Kids arrived home shortly after. They craved my attention, but my mind was elsewhere. It is hard to come out of your head when you have been in it for so many hours, isn't it? I asked the babysitter to stay a bit longer and I decided to go for a run to clear my head.
I thought of those day trips and the outdoor lunches in the summer heat. Sometimes even on the side of the road, close to a stream, or under an oak tree. I remembered my dad cutting melon slices for all of us while my mom finished her lunch. An array of small plates and nibbles always followed by a tart or shortbread we took from our family's pastry shop.

The following day, I woke up knowing I still had lots of work to do, but thought it would be fun to prepare a quick meal Miren and I could eat outside. Partly for her, but mostly for me. Just to get a break and some fresh air.
We had ripe heirloom tomatoes that I blended into a gazpacho with cucumber, scallions, fresh herbs, and a drizzle of avocado oil. Toasted gluten-free bread , rubbed juicy tomato all over it, and topped it with shaved Idiazabal . Miren's favorite.
We also enjoyed a simple salad with greens, berries, and pan seared salmon. And for dessert, plum and currant crumble.
"One for you, one for me."

Chilled Heirloom Tomato Soup
Serves 2
3 medium heirloom tomatoes, stem removed and diced
1/2 cucumber, diced
3 scallions, diced
3 tablespoons olive oil
2 tablespoons red wine vinegar
small bunch of oregano
2 sprigs thyme
salt pepper
avocado oil, to garnish
2 slices toasted bread
Idiazabal or Manchego cheese, shaved
Puree all ingredients in the blender and chill for 1 hour.
Serve with toasted bread rubbed with tomato and shaved Manchego cheese.
Salmon and Berry Salad
Serves 2
8 ounces wild-caught salmon (mine was Coho)
2 cup mixed greens (frisee, baby romaine, watercress, arugula, parsley...)
1/4 cup yellow raspberries
1/4 cup blackberries
1/4 cup red currants
1 scallion, sliced
1 teaspoon Dijon mustard
1 tablespoon apple cider vinegar
1/4 cup olive oil, plus more for salmon
salt and pepper
In a small saute pan, cook the salmon for 2 minutes (depending on the thickness) with 1 tablespoon of olive oil over medium high heat. Flip over and finish cooking for another 2 minutes. Set aside.
In a bowl, toss together the greens and all the berries.
In a small bowl, whisk together the mustard, vinegar and olive oil. Drizzle the vinaigrette over salad. Season with salt. Toss to combine and top with seared salmon pieces.
Red Plum, Currant, and Almond Crumble
Serves 4
1/2 cup (70 grams) superfine brown rice flour
3/4 cup (70 grams) almond meal
1/3 cup (70 grams) natural cane sugar
5 Tbs (70 grams) cold unsalted butter, diced
6 red plums, pit removed and sliced
1/4 cup red currants
1/4 cup white currants
1 Tbs natural cane sugar
1 vanilla bean, split lengthwise and seeds scraped
1 Tbs lemon juice
1 Tbs cornstarch
Preheat oven to 400F (220C).
In the food processor, combine the first four ingredients and pulse until it forms a crumbly sand. Transfer to a bowl and chill until ready to use.
Toss the rest of ingredients in a bowl. Divide amongst 4 (8-ounce) bowls. Top with crumble.
Bake for 30 minutes until filling bubbling and crumble is golden.

Well I was doing some hand painting on the interior of my 1955 Chevy Bel Air, I had a small bottle of paint thinner open to clean my brush out and knocked over the bottle with my arm while reaching for another bottle of paint.
sorry for the bad pic it was with a cell phone.

English Peas, Buckwheat Greens And A Strawberry Tart

Posted about 13 hours ago by kimtopps to kimtopps's posterous

It has been quite hectic around here.
During these past couple of weeks, I have had to park my book writing routine aside to focus on a couple of other projects I am super excited about. I wish I could share more, but we will have to wait. All I can say is that it involves a major magazine and I had a blast.
However, all of this has taken a bit of a toll on me.

When I woke up Sunday, I felt as though I had run a marathon. Sore and exhausted.
C. encouraged me to take some time for myself in the morning. He took the kids and I headed to the farmers' market. I find it relaxing to walk around, people watch and get inspired by the produce and talking to the farmers I have come to know this year.

Unfortunately, it was the last day of the market. Yes, when the rest of the country is just now gearing up for their growing season, ours is coming to an end. Well, not exactly. Things will still grow in the summer, but much slower and not so abundant. Most of the farmers I know take the summer off to travel and learn from other farmers.
As it was the last day, I indulged in everything I saw. The usual suspects such as eight ball zucchini, heirloom tomatoes, strawberries, mulberries, farm eggs, kale, beets, english peas... But I also found buckwheat greens .

This was the first time I had even seen buckwheat greens. Beautiful greens with tiny little flowers.
As I started to read about them, I found out that they can be somewhat toxic when consumed in large amounts and that is why they are not recommended in juicing. However, a small amount can be beneficial.
Sunday night, I made a quick soup with English peas and buckwheat greens. The soup was tasty and mild. Spinach or even lettuce would work just as well.

When Monday came around, I was ready to start testing more recipes for the book.
I really feel so lucky to be able to do what I love. Time flies when I am working and enjoy every second of it.
But when time flies, lunch must also be quick. Crushed pea, cherry tomato and goat cheese tartines to go with leftover soup from the night before. I blanched some English peas in salted boiling water, then crushed them with a fork. Mixed with goat cheese, scallions, olive oil, salt and pepper on toasted gluten-free bread.

I was testing a new tart dough and with the leftovers, I made a quick almond and strawberry tartlet that Miren and I had for dessert. Took a couple of chairs outside and had an impromptu picnic in the back lawn.
Then back to work.
English Pea and Buckwheat Greens Soup
Serves 4
2 Tbs olive oil
1 leek, white part only diced
1 garlic clove, minced
1 medium potato, peeled and diced
2 cups shelled peas
2 cups buckwheat greens or spinach
1/2 tsp salt
1/4 tsp black pepper
5 sprigs thyme leaves
3 cups chicken stock
Goat cheese, optional
Chopped scallions, optional
Olive oil
In a small pot, heat the olive oil over medium heat. Add the leek and the garlic and cook for 3 minutes until soft.
Add the rest of the ingredients and bring the liquid to a boil. Cover the pot, reduce heat to medium low and let it simmer for 15 minutes or until soft.
Puree the soup. Serve with chopped scallions, goat cheese, drizzle of olive oil, and toasted bread.

Strawberry and Almond Tart
Makes 6 3-inch tartlets
Pie crust of your choice (mine was gluten free)
? cup (110 g) unsalted butter, room temperature
? cup (110 g) natural cane sugar
1 egg
? tsp almond extract
1 cup (110 g) almond flour
1 Tbs (10 g) tapioca starch
? tsp salt
2 cups sliced strawberries
Pre-heat oven to 400F.
In a stand mixer, cream the butter and sugar with the paddle attachment until light. Add the egg and almond extract and mix until combined. Add the dry ingredients and mix.
Roll out the pie dough to 1/4-inch thickness. Cut 6 4-inch disks and fill tart molds with them. Cut off excess dough.
Fill the tart molds with frangipane and arrange the sliced strawberries on top. Bake for 20 to 25 minutes until crust golden.
